Just outside Monaco, Uvita unfolds its golden sand beneath the cliffs of Cap d'Ail, fringed with strelitzia trees like an echo of Costa Rica and its idyllic beaches. "Slowly, slowly," whispers chef Aurélien Rossen, whose transalpine cuisine is bursting with freshness and flavor: sea bream ceviche with coconut milk, tuna tataki, signature pizzas like the Pistacchio & Mortadella, whole octopus with virgin sauce, fresh pasta, grilled meats… From 17 pm, it's aperitif time with a new dedicated menu: barbajuan, hummus, guacamole, zucchini blossom fritters… an invitation to linger on the beach into the sunset, to the rhythm of the lapping waves.
