Talented young chef Adrien de Crignis has overseen the kitchens at La Bastide de Moustiers, a house dear to chef Alain Ducasse’s heart, for the past year. Having confirmed his Michelin star, he is now on a quest for a Green Star in recognition of committed, responsible cuisine. The establishment has employed the services of a specialist gardener since February to develop the organic vegetable garden and supply the kitchens almost entirely self-sufficiently, producing vegetables for use in their entirety in a way that respects the environment. The chef’s dishes combine judiciously bold, lively flavours with select local ingredients: green asparagus, trout roe, yuzu sabayon and bottarga; local lamb, spring onions and wild garlic. La Bastide de Moustiers is veritably a place that touches the senses...
