The Star’s return. Michelin-starred chef Christophe Schmitt has overseen all culinary offerings at the superb Terre Blanche estate since 2021. Last February, Michelin awarded the chef and his team a star for their gastronomic restaurant Le Faventia. Here he offers creative, distinctive cuisine, both profound and delicate, celebrating the Provençal and Mediterranean terroir. The menu takes you into a contemporary and intense universe, combining fast cooking, marinades, and fermentations : Mediterranean red mullet in marinated petals, cold clarified bouillabaisse, saffron and black garlic, Carabineros cooked in rose steam, green strawberries, and caviar, garum vinaigrette... Pâtissier Jérémie Gressier’s no-sugar-added sweets are a celebration of nature. Dinner on the terrace on a summer’s evening, with panoramic views over the Fayence hills, is unforgettable.
