With a father and grandfather both renowned pastry chefs in Greece, Xenophon Kitsas had a life creating sweet treats mapped out for him! His thirst for learning brought him across Europe to perfect his craft with French techniques and write his own story here, in the early years dividing his time between the two countries then in 2011 settling for good in the Bellet hills with his wife, Sara, who helps him develop his creations. Inspired by vines as far as the eye can see, they have come up with Choco-Vin, a perfect partnering of chocolate with top Riviera wines, one colour for each vineyard: Château de Bellet white, Domaine de la Source rosé, Clos Saint Vincent red. Their take on the traditional liqueur chocolate is a delicious ganache with a heart of Branda, a Niçoise eau-de-vie better known as Marc de Provence, which has met with such success they're developing a whole collection featuring local specialities such as Pastis de Nice, the Lérins Abbey's Lérina Verte and Menton's lemon liqueur.
