Perched high above the Sofitel Marseille Vieux-Port, the splendid Les Trois Forts restaurant has no intention of resting on its laurels. Since June 2024, Marseille chef Sylvain Touati has been at the helm, bringing a unique identity to this iconic restaurant, combining local roots and a seascape. A native of the Endoume neighborhood, he creates a personal, generous, and intuitive cuisine inspired by the aromas of his childhood and local Provençal produce. Here, each dish tells a story: that of a visceral connection to Marseille, the Mediterranean, and the seasons. The menu evolves with the market, blending contemporary creations, nods to Marseille tradition, and dishes to share in a spirit of conviviality.
