The identity cuisine of Chef Christophe Pulizzi of the Olivier restaurant, in Pertuis

At L'Olivier , Christophe Pulizzi has decided to go against the grain. Based in Pertuis, in the heart of the Sevan Parc Hotel but completely independent, the chef unfolds a very personal cuisine on the plate, nourished by his Sicilian roots, his childhood in the Alps and his years spent between Marseille, Avignon and the Luberon.

His menu , "Against the Current, Along the Durance River," tells the story of this intimate geography by following the river upstream, from the Mediterranean to the Alps. And for the end of summer, Pulizzi takes the concept even further by revisiting a Provençal classic: ratatouille. Except here, everything is done in reverse. Tomatoes from Pertuis, zucchini and brousse cheese from La Tour-d'Aigues, peppers accompanied by chickpeas from Les Mées, eggplant paired with trout from Châteauroux-les-Alpes, then onion, duck, and larch liqueur from Saint-Jean-Saint-Nicolas compose a journey that is as local as it is unexpected. And the chef doesn't stop there: the circle closes with a ratatouille sorbet.

Local produce, including flowers and herbs grown directly in the restaurant's own garden, serves as the starting point for dishes that Christophe Pulizzi then likes to subvert with seasonings from elsewhere. A cuisine rooted in local identity, precise yet never rigid, which provides a very good excuse to make the trip to Pertuis this weekend.
