Two years ago, aged barely 23, Yazid Ichemrahen was already one of Avignon’s 50 top personalities. 2014 was the year this valiant pastry chef was announced world champion for ice cream desserts. Now the follower of Robuchon, Conticini and their ilk has opened his own pastry shop – a dream of a place, with tearoom and patisserie classes for children and adults. Yazid Ichemrahen’s team, who hail from Hong Kong, Monaco and Taiwan, work with delicacy and dexterity. The concept is based on ultra-freshness and offering customers four cakes for the price of three.‘‘To make sure our eclairs keep their crispness, the topping is poured on at the last minute, to order,’’ he says.
