An ode to the season, this menu of summer creations is inspired by the delicate world of Chef Sébastien Roux, awarded two toques by the Gault&Millau guide. He offers a personal and refined approach, where each dish is designed as a moment of emotion and draws its inspiration from the richness of local products, between the sea and the hills.
The current menu showcases carefully selected ingredients: blue crab and candied watermelon, Mediterranean chicken carpaccio, Piedmont sirloin steak, and even apricot vacherin, all fresh and light. Each dish plays on textures and aromas to offer a nuanced experience, from first glance to last bite.
