For the past five years, people have climbed to the top of The Babel Community primarily for the view: Notre-Dame de la Garde standing guard, the rooftops of Marseille unfolding before us, and the Mediterranean stretching to the horizon. The cuisine, however, remained discreetly in the shadow of the panorama. Ciel Rooftop has decided to reverse this by inviting Chef Philippe Coulot to its kitchens. Trained in Aix-en-Provence under Jean-Marc Banzo and having worked in the Parisian kitchens of Jérôme Banctel (a three-Michelin-starred chef, no less), he then spent two years in Chile, long enough to learn Spanish and allow Latin America to permanently infuse his culinary style. Back in Marseille via Mama Shelter and La Villa, he now presents a menu that moves slightly away from Italian to embrace a broader Mediterranean flavor: amberjack crudo with black garlic, blue crab with avocado, beef tataki with soy sauce, alongside an ever-popular vitello tonnato and pizzas that are always perfect for sharing. Elisa Dufy, director since late 2024, has orchestrated the same transformation in the dining room and bar, with a signature cocktail menu created by Elliot Della. The ambition isn't to turn the place into a fine-dining establishment, but to finally do justice to this tranquil setting that never gets old.
