2-Michelin-starred chef Sylvestre Wahid reopens a restaurant in Saint-Rémy-de-Provence

In Saint-Rémy-de-Provence, the two-starred chef opens a new chapter in his story at Mas de l'Amarine, a confidential address where gastronomy, art of living and hospitality come together in the present.

Some openings resemble declarations. And others are more like a return to his roots. With the takeover of Mas de l'Amarine in Saint-Rémy-de-Provence, Sylvestre Wahid is undoubtedly undertaking the most personal project of his career.

Nestled in the heart of the Alpilles, this 18th-century farmhouse is more than just a charming address. It's a house steeped in history, having passed through the hands of the artist Roger Bezombes, a close friend of Albert Camus, and later the composer Bernard Parmegiani. A place of creation, contemplation, and sharing, it has always attracted free spirits.

For several years now, Sylvestre Wahid had been a regular guest. Far from the frenetic pace of large hotels, he found refuge there, a space to slow down and reflect. When the original owners, Alice Monnier and Bernard Coloma, decided to pass on the property, the next chapter unfolded naturally.

The chef, trained under Thierry Marx and Alain Ducasse, awarded two Michelin stars and recognized as one of the most sensitive figures in contemporary French gastronomy, is not seeking to impose a concept here. On the contrary. His ambition is to preserve the spirit of Le Mas while bringing his own vision of hospitality and cuisine to it.

This latest approach is part of a quest for balance where technical precision serves the product. It's a seasonal cuisine, deeply rooted in its local area, but also attentive to new wellness concerns: less salt, less sugar, more lightness, and meticulous work with infusions, textures, and natural flavors.

The project is structured around two experiments. The first, The Sylvestre, gastronomic restaurant Open since May, the restaurant offers cuisine inspired by the two worlds that have shaped the chef's career: the Alps and Provence. Facing the Alpilles mountains, in a dining room with panoramic views, the menus are complemented by both wine pairings and alternative pairings featuring infusions and fermented beverages.

Since June 1st, Alya's Garden for its part, offers a a freer and more relaxed approachA sharing table where French cuisine is infused with Pakistani and Asian influences, echoing the chef's origins and personal history.

But Mas de l'Amarine is more than just its restaurant. The property also boasts six guest rooms, each named after a nephew or niece of Sylvestre Wahid, a nod to the family atmosphere of the place. With its 5,000 m² garden, heated swimming pool, stone basin, and personalized service, the establishment cultivates a discreet luxury, the kind where you immediately feel welcome.
