After 17 years in charge of the Michelin-starred restaurant, Thierry Thiercelin has left for pastures new. Pietro Volontè, formerly of the Locanda Locatelli in London and the Trianon in Paris, is now the 5-star hotel’s head chef, serving a brand new menu devised by his mentor, Simone Zanoni (2 Michelin stars). Standout dishes include: ravioli of langoustine and lobster steamed in a Riesling bisque and its carpaccio, lemon marmalade and a bouillabaisse sauce; Black Angus beef fillet cooked in a pot, cabbage stuffed with oxtail, red wine sauce.
